Digsby’s will be opening another restaurant Chilly Boy’s pizza, pasta and grill by Digsby’s, this March in Seville as the resturant’s third location since the recent opening of Digsby’s Too in 2023.
The original Digsby’s first opened in March 2016, but closed in 2021 due to the Coronavirus.
The pandemic resulted in the selling of the first Digsby’s location and a re-opening of a Digsby’s Too diner located in downtown Seville in 2023.
In recent years, the owners Anita Winkler and Jerry Winkler noticed the new owner of the former Digsby’s restaurant pre-Covid was selling the building. With this information the family decided to repurchase the building and start up another Disgby’s chained restaurant.
“Ever since we opened the downtown diner, we always joked, boy, if they ever sell Bosco’s, we’re going to go back,” said Anita Winkler, co-owner of the Digsby’s restaurants. “Then the opportunity actually happened. We decided we were just going to go for it.”
While Digsby’s Too is a more breakfast and lunch oriented diner, such as sandwiches and salads, that changes with the new restaurant Chilly Boy’s.
The new restaurant will consist of more Italian based food, with a large display of pastas and subs.
At the downtown Digsby’s Too location the diner is known for their popular fried chicken, though there will be lots of big changes with the new menu of Chilly Boy’s, the iconic fried chicken will be sure to be featured.
“A lot of people really love our fried chicken, it is kind of something I’ve had people ask me about ever since we closed,” said Millie Kirkendall, daughter of Anita Winkler. “Once we opened the new diner downtown so many people [ask], are you gonna have your fried chicken?”
To the fried chicken fans, do not worry, the chicken stands firm on all Digsbys’ menus. Some brand new menu items the family is looking forward to sharing consist of all sorts of their pizzas, all-new subs and homemade pasta.
The Digsby’s family worked to create pizzas like no other with unique toppings and flavor profiles such as the mentioned taco pizza, seafood pizza and philly cheese steak pizza. Not only that, but another exciting new menu item recommended by the owners are the homemade pasta with specialty house made meatballs with it.
With Chilly Boy’s the Digsby’s family hopes to share with everyone a new palette and spread love within the community.
“We are definitely super excited to serve the community,” said Kirkendall. “You know, see new faces and just be a part of back where we started.”
